Pumpkin Cupcakes With Cream Cheese Frosting

What more appropriate to eat in fall than pumpkins? And what better way to add pumpkins to your daily diet than make them into cupcakes! I love cupcakes and make them whenever I can because they’re very easy to do and they are extremely delicious. The recipe I am going to share with you is for the tastiest cupcakes you will ever eat – the pumpkin cupcakes with cream cheese frosting!

To make the cupcakes you will need:

1 18.5-ounce box yellow cake mix (plus the ingredients called for in the package directions)
1/2 teaspoon pumpkin pie spice
1 15-ounce can pumpkin puree
2 8-ounce bars cream cheese, at room temperature
2 cups confectioners’ sugar
*you can add 24 pieces candy corn on top of the frosting to decorate it
  With this recipe you will make 24 cupcakes and it will take you around an hour (both cooking and preparation).
  First, heat the oven to 350° F and line two 12-cup muffin tins with paper liners. Prepare the cake mix as directed, but add the pumpkin pie spice and substitute the can of pumpkin puree for the water called for in the package directions. Divide the batter among the prepared muffin tins and bake until a toothpick inserted into the center of a cupcake comes out clean. It will take you around 18 to 22 minutes. Let them cool on your kitchen counter. Meanwhile, using an electric mixer, beat the cream cheese and sugar until creamy. You can spread the cream cheese with a knife or a spoon or use a piping bag to make different unique and cute designs. Add a piece of candy corn or some other type of decoration, like sprinkles, and your cupcakes will be done!
  Pumpkin cupcakes are great for a Halloween treat if you are making a party and want to surprise your guests with something home-made desserts. If you are a pumpkin fan you can try doing the same recipe, but with a bigger mold and try to make a cake, not just cupcakes or make pumpkin punch (it’s very easy – you need pumpkins, rum, cinnamon and sugar).
